William (Scott) Whiteside, Ph.D., is a professor in the Department of Food, Nutrition & Packaging Sciences at Clemson University. He has taught senior and graduate-level classes in packaging machinery, distribution and design, various short courses and has made numerous formal presentations, both domestically and internationally, on topics such as packaging fundamentals, biopolymer packaging, food packaging, thermal food processing, confectionary packaging, retort packaging, packaging design and development. Whiteside is a recognized thermal process authority by FDA and USDA, and is sought by U.S. and international food processing and packaging companies for his knowledge of thermal processing of food products, retort pouch processing, food packaging and shelf life. He has developed a successful research program in the areas of food packaging, retort pouches and food product shelf life with one patent and led the development of a state-of-the-art laboratory focused on the application and development of new retort pouch technology and other thermal processing technologies for packaged foods. Whiteside is a member of the Institute of Food Technologists, Institute for Thermal Processing Specialists and International Association for Food Protection
